The traveler is Francesca Sofia, the founder of this innovative food concept. Francesca Sofia has been suffering from insulin resistance for four years. All through these years, she discovered that it’s not easy to eat out both tasty and healthy, with no starch and no sugar.
After long researches, she thought it was possible to combine the benefits of Low Glycemic Index diet with a gourmet cuisine. It was a long process, but finally, Lowsteria is becoming reality.
We use particular ingredients, flours and food combinations to achieve our goal: giving a unique culinary experience which challenges the prejudices associated with “healthy” foods, sharable by everyone.
